Gluten-free/Dairy-free Fudge!

My Auntie Chris shared her Five Minute Fudge recipe with me years ago and I've been making it every Christmas since... This year, I had Blaine make the recipe with substitutions to see if we could make fudge that we could enjoy too. And, it turned out great!

The ingredients: Jet-Puffed mini marshmallows, granulated sugar, Tropical Source gluten-free/dairy-free semi-sweet chocolate chips, Earth Balance buttery sticks (no dairy), Flavorganics organic vanilla extract and Thai Kitchen organic Coconut Milk

A happy baker and yummy "so chocolatey" fudge!


Five Minute Fudge

2 Tbsp Earth Balance buttery sticks
2/3 cup coconut milk
1 2/3 cup sugar
dash of salt (optional)
2 cups miniature marshmallows
1 1/2 cups chocolate chips
1 tsp vanilla extract
1/2 cup chopped nuts (optional)

Combine Earth Balance, milk and sugar (+ salt if adding) in a saucepan over medium heat. Bring to a boil. Cook 4-5 minutes; stirring constantly. Start timing when mixture starts to "bubble" around edges of pan. Remove from heat. Add vanilla. Stir in marshmallows, chocolate chips (and nuts, if adding). Stir vigorously for 1 minute. Pour into a glass 11 x 7 pan lined with parchment paper. Hold paper with thumb on one side while gently encouraging the fudge to spread out and fill the pan. Cool. Chill in fridge and cut into squares. ENJOY!
